Before I start with the Christmas themed posts, I wanted to share one very easy and simple dessert recipe – this delicious, vegan Apple and Berries gluten-free crumble! This is quite a common dessert in the food communities but I have noticed many times that most of the recipes contain added sugar. You can easily make it without any added sugar and with just a bit of honey, there is no need to add too much additional sweeteners as the fruits are sweet enough! The crumble is gluten-free as I am using gluten-free rolled oats and wheat-free flour but if you are not worried about gluten, you can easily use any other flour.
Sunday was a busy day, the actual preparation of this dessert took just a few minutes but I decided to make another recipe video! It takes quite a bit of time to edit the video and the pictures but here it is, please let me know if you find these videos useful, I plan on making more when possible. :)
My favourite wheat-free flour is quinoa flour! Not because it’s gluten-free but because it is a nutritious ingredient that will add extra protein to your dish. You can also make some baked goods with it, like my Simple gluten-free walnut brownie.
The berries I use in this recipe are blueberries and raspberries which are not really in season everywhere at the moment but I always have frozen all year around as I use them in my morning smoothie. You can easily substitute them with whatever seasonal fruits you prefer. The apples on the other hand are always available in Britain and I love the way they taste when they are cooked with the juices from the blueberries and raspberries.
I keep referring to this Apple & Berries gluten-free crumble as a dessert but I actually find that it makes a great breakfast too. It doesn’t take much time to prepare and it is a bit like a very fruity granola pot. You can add some natural yogurt and it will become very creamy as well. Enjoy!
Ingredients
- 1/2 red apple (cut into cubes)
- 3/4 cup blueberries
- 1 cup raspberries
- For the crumble:
- 1/2 cup gluten-free rolled oats
- 1/3 cup quinoa flour
- 1/4 cup coconut oil
- 1 tbsp honey
- a handful of almonds flakes
Instructions
- Preheat oven to 200 °C/ 390 °F.
- In a bowl combine the oats, flour and almond flakes.
- Add the coconut oil and honey to the dry ingredients and mix.
- In 4 small ceramic ramekins or one larger oven-proof dish, distribute all of the fruits evenly.
- Sprinkle the crumble mixture over the fruits. Sprinkle a bit of extra almond flakes on top.
- Bake in the oven for 15-20 minutes until the crumble turns golden.
