Nutritious avocado and feta mixed salad, perfect for a healthy lunch. I wish I could have my lunch every day somewhere outside in this lovely summer weather we have now here in London, unfortunately not every day is so blissful but wherever you are, this salad will still be lovely.
I often buy this living salad, it comes in its own tray and it can stay fresh up to a week if you water it. If you are in the UK, you should be able to find it in most popular supermarkets during the spring and summer months. It’s not organic so I was a bit concerned about the chemicals it has been treated with and decided to email the company that grows them. Unexpectedly I had a very quick response from the company founder itself explaining that they just use a base fertiliser and use a chemical when there is a disease but no insecticides or herbicides. When the salads undergo lab testing they often come with no residues. This is great for a non-organic production and the salads are quite cheap, just 1£. If you by any chance have home grown salad I am sure it’s a much better option. For those living in the city that don’t have their own garden or a nearby fresh market, I don’t think it can get any fresher than this.
This salad is very rich and tasty and it will provide you with a lot of those healthy monounsaturated fats you need in your diet. Fat is not something we should avoid as long as it’s natural and unrefined. Avocados are one of the best high-fat foods and they are delicious!
A great companion of this tasty salad is a glass of chilled white wine. Enjoy!
Ingredients
- 1/2 avocado
- 1 medium tomato
- a bunch of fresh salad leaves
- 100 g Feta cheese (crumbled or cut into cubes)
- Extra virgin olive oil
- salt to taste (optional)
Instructions
- Cut all of the fresh ingredients and combine.
- Add the Feta cheese and season with a drizzle of extra virgin olive oil and salt to taste.
