This Cucumber & Spinach smoothie is my favourite green smoothie combo, it’s super fresh and light. If you add more water it feels more like a juice rather than a smoothie but it’s still very tasty. I still get weird looks at the office when I bring it in, people think it doesn’t taste nice but they are so wrong! :)
Green smoothies are the go-to drink for most healthy lifestyle enthusiasts out there and there is a good reason for this. They normally contain less sugar than the fruity smoothies, which makes them a healthier choice but of course it all depends on the ingredients, not so much on the colour. You need to make sure you are not unintentionally consuming large amounts of sugar by adding too much fruits in one drink. Although this is natural fructose, if you consume very sweet, fruity smoothies on a daily basis you might be adding too much sugar to your diet. This is why it’s a good idea to always combine fruits and veggies when you choose your smoothie ingredients.
The ingredients for this Cucumber & Spinach green smoothie are simple and I normally always have them available as I always keep a bag of frozen spinach in the freezer. I make two versions of it depending on what fruits I have available. To add sweetness to the smoothie I either add a green apple or a kiwi. Apples are available all year around so I use kiwi only when it’s in season. You can also use a pear instead, the options are endless! To add some protein I add a scoop of my vegan hemp protein powder, which also adds to the green colour.
You might also like my other green smoothie recipe, which has been quite popular – the Kale & Avocado green smoothie is creamier than this one and contains even less sugar. Both are great depending on what you want – a lighter fresh smoothie or a more filling creamy one. Here are some other smoothies you might like:
- ½ cucumber
- ¾ cup spinach
- ½ green apple or 1 kiwi
- 1 scoop hemp protein powder (optional)
- 200 ml water
- Add all of the ingredients in a blender and blend until smooth. Add more water if needed.
