Ingredients
- 125 g walnuts
- 100 g dried apricots (about 14)
- 90 g dates (about 11 small dates)
- 1/2 grated nutmeg (about 1/2 tsp)
Instructions
- In the food processor blend the walnuts till finely chopped.
- Add the dates, apricots and the nutmeg and blend again until you get the mixture shown on the picture above.
- On a parchment paper sheet (to avoid sticking) flatten the dough in a rectangular/square shape and cut the individual bars with a knife.
- Pop them in the freezer for about 10 minutes or until firm and they are ready to eat.

The above picture shows all you need to do to make the dough. The food processor does the whole job for you and the only thing left is to shape the bars and leave them to cool in the freezer.
The nuts and the fruits are a great energy booster. These bars are very high in magnesium, fibre and a range of other health-benefiting nutrients. The walnuts will also provide you with the essential for our body omega-3 fatty acids. You need to keep in mind that they are quite sweet and therefore high in sugar so don’t make the bars too big. I know you want to, but try not to eat too many at once :)
dates These apricot energy bars are perfect for lunch boxes or to take to work for an afternoon snack. Best to keep them cool in the fridge and they will last longer.
