I am using beautiful seasonal summer fruits for this recipe. Recently, I have been literally eating peaches from morning to evening. The supermarkets haven’t been great at sourcing good peaches, but my local fruit & veg shop has the most amazing flavourful and juicy peaches, I had to make them a star of one of my recipes! The classic combination of yogurt and fresh peaches make the perfect base for simple and very delicious ice lollies!
These peach frozen yogurt ice lollies are sweet and tangy at the same time. I have added a tbsp of honey in the ice lollies mixture to balance the taste, but you can add more if you want them to be sweeter. Frozen yogurt is not quite as creamy as regular ice cream, but it’s definitely a super delicious treat, especially when combined with flavourful peaches and raspberries.
When it’s time to take out the ice lollies from the moulds, don’t try the popular google advice of putting the moulds in warm water. This will ruin the look of your ice lollies as they will melt slightly. Just take them out of the freezer, let them sit for 5 minutes and hold each mould with your warm hands and gently pull until they are out.
Ingredients
- 2 medium peaches
- 1 cup (250 g) full fat greek yogurt
- 1 tbsp honey (add more if you wish)
- around 1 cup fresh raspberries
Instructions
- Blend all the ingredients, except for the raspberries until you get a smooth mixture.
- Add a few whole raspberries in each of your ice lolly moulds.
- Pour the peach mixture in the moulds and put a lolly stick in each mould.
- Freeze for at least 4 hours or until solid.
