Do you need a creamy, healthy and dairy free sauce without using any of those dairy free cream products? Here is a great idea, easy to make and very refreshing. This creamy, vegan cucumber sauce is ready in just 5 minutes and it’s also green which looks kind of cool I think :)
The creaminess comes from the blanched almonds, the green colour from the cucumber and there are some other things in there to really create an amazing taste. This sauce can work well as a dip too, I love it with my carrot chips but it’s great as a sauce in a good burger or a simple sandwich.
This sauce is not only delicious but nutritious as well, the almonds are providing you with healthy fats and protein.
- 1/2 cucumber
- 80 g almonds
- 40 ml extra virgin olive oil
- 2 tbsp of lemon juice
- 1 garlic clove
- black pepper & salt to taste
- With the use of a food processor, blend the blanched almonds together with the chopped cucumber and the rest of the ingredients until you get a smooth sauce.
- Try it and add salt and/or pepper to adjust the taste if needed.
