It’s the end of the summer but it’s never too late for a refreshing ice cream, especially for this delicious strawberry chia homemade ice cream! I have decided to make a dairy free one for those that are vegan or can’t tolerate dairy ingredients. This ice cream is so easy to make and it doesn’t require an ice cream maker!
I am sure everyone loves strawberry ice cream and the best part about this one is that there is no reason to feel guilty after eating it as it’s full of good, healthy ingredients. There is no added refined sugar, just some fruits, almonds, honey and very nutritious chia seeds.
The consistency of this homemade ice cream is not really the same as the dairy ice creams with full fat cream but it is difficult to achieve exactly the same type of texture without milk and cream. I do think it’s still very delicious and it’s definitely a healthy and refreshing treat. You can give this to your kids without worrying about any bad ingredients as you know it’s clean from additives.
I suggest taking the ice cream out of the freezer about half an hour before serving it to allow it to soften. Due to the fact that there is no dairy the ice cream freezes a bit harder than regular ice cream and it needs more time before it’s good to eat. I am sure you will love this icy sweet deliciousness, you can taste the real strawberries and almonds in every bite! You will be surprised how sweet this ice cream tastes just with these natural sweeteners!
- 1 cup blanched almonds
- 1 cup fresh strawberries
- 1 1/2 frozen banana
- 3 tbsp honey
- 1 1/2 tbsp chia seeds
- 1/2 cup water
- First you need to make the almond cream. Use either a food processor or a type of blender but basically something powerful that is going to chop the almonds very finely, almost turning them into dust. I do it by putting the almonds in a bowl with a bit of water (not all of it) then with the help of a hand blender I start blending them and gradually add the rest of the water until I get a thick, creamy mixture. I suggest adding the water based on your judgement but it should be around 1/2 cup. Avoid making it too watery.
- Once you have your almond cream pour it in a food processor (if not already there) and add the rest of the ingredients except the chia seeds. Blend for a couple of minutes until you get a smooth creamy mixture.
- Add the chia seeds and stir well.
- Pour the ice cream mixture in a container and freeze over night or for at least 5 hours.
